gluten free masala peanut butter cookies


the cookie that eats like a meal.

i'd love to take credit for the idea of putting curry in a peanut butter cookie, but whimsy and spice beat me to it. their massaman cookie is a crispy sandwich cookie, like an indian nutter butter, and it blew my mind. having recently failed at making flour-less peanut butter cookies, i was ready to redeem myself. but ever since the massaman cookies, plain peanut butter just won't do. enter garam masala.

if it sounds crazy, that's because it is.

a full teaspoon of garam masala will produce an assertive flavor, so feel free to reduce the amount if you're feeling sketchy (don't do it). the lack of flour in these cookies means they're on the crumbly side, so handle them delicately.

i'd also like to take credit for figuring out this awesome flourless peanut butter cookie, but i didn't do that either. it came from joy the baker, and it kills. if you don't have a gluten sensitivity, just throw some (salt free!) garam masala in your favorite peanut butter cookie recipe and see if it doesn't knock your socks off. because it will.

gluten free masala peanut butter cookies

  • 1 cup natural chunky peanut butter (mixed very well if separated)
  • 1/2 cup sugar (evaporated cane juice)
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon salt free garam masala
  • coconut oil to grease the baking sheet

preparation:

  • preheat the oven to 350 degrees. wipe a cookie sheet with coconut oil and set aside.
  • add peanut butter and sugars in the bowl of a stand mixer (you could use a hand mixer also). mix for about 2 minutes on high speed until everything is well combined.
  • add the egg, baking soda, and garam masala. mix for another 2 minutes. dough will be crumbly.
  • squeeze the dough into balls, a little over 1" in diameter. place on the cookie sheet, spacing them a little apart. press with a fork gently to create a criss cross pattern.
  • bake for 10 minutes, until lightly golden. let cool on the sheet for 2 minutes, then transfer to a rack to cool completely. then stuff your face.

makes 2 dozen cookies.
