pizzelles


it's time to celebrate large psychic rodents with a delicious cookie.

i've wanted a pizzelle iron for years. my momma found a brand new one at a thrift store for cheap, so i lucked out. it's only been used twice, but already i can't imagine not having it. the batter is easy to assemble, but don't assume they're fast to make. there's a lot of waiting around in 30 second intervals.

ingredients:

  • 6 eggs
  • 1/2 cup vegetable oil
  • 1 TBL vanilla extract
  • 1 TBL anise extract
  • 3 cups all purpose flour
  • 2 tsp baking podwer
  • 1 1/4 cups sugar

  • in the bowl of a stand mixer, beat eggs, oil, and extracts until smooth (i did this with a fork- it was faster than using an attachement on the mixer).
  • sift onto the mixture the flour and baking powder.

  • add sugar to the bowl and mix until thoroughly combined.
  • mixture will be sticky and stiff.

  • spray a small amount of cooking spray on the plates after the iron has been preheated.
  • depending on the size of your cookies, drop batter by the teaspoonful onto the plates.
  • press down the top and cook for approximately 30 seconds.
  • remove cookies from plates, using a knife or fork to help. cool on a cookie sheet while you make the next batch.

it's very easy to get these off the plates with a knife or a fork, so don't be concerned about sticking. the overflow is also easy to break off after the cookies have cooled. keep a cookie sheet under the rack, to catch all the all the overflow crumbs you break off.

if you want to get crazy, you can buy some mini cannoli forms to wrap the cookies around while they're hot from the iron. this was the first time i've ever had a pizzelle cannoli. trust me when i say it was every bit as good as a fried shell. (maybe better)
