lemon ginger ale popsicles

the float popsicle trend is still going strong in my freezer, and i see no end in the near future. as long as it's over 89 degrees in NYC, i will continue to make and eat float popsicles. this time, it's lemon sorbet and ginger ale. the ginger ale had actual floaters of ginger in it, and the popsicles came out with a bit of a spicy kick.
lemon ginger ale popsicles
- 1/2- 3/4 pint lemon sorbet, softened
- 1 bottle ginger ale
preparation:
- if using a popsicle mold with wooden sticks, soak the sticks in hot water for 30 minutes before you use them. this helps keep them from bobbing up when the popsicles are freezing.
- fill each cavity with a splash of ginger ale, and a spoonful of sorbet. alternate ginger ale and sorbet until you reach the top of the mold.
- scrape off any excess foam from the cavities. add the lid and sticks. freeze overnight.
- enjoy the tongue tingle while it lasts!
