rhubarb strawberry bellini

time for a toast!

our friends are kicking off wedding season by getting hitched today! that can only mean one thing- bubbly. and plenty of it. bubbles and fruit are a natural combination, and one of my favorites is rhubarb and strawberry. thankfully, i have some compote on hand for just such an occasion.

rhubarb and strawberry bellini

• add a few tablespoons of rhubarb strawberry compote to the bottom of a tall glass.
• pour in a bit of prosecco. when the bubbles subside, give it a stir.
• top off with more prosecco.
• dive in and swim around.
