strawberry rhubarb muesli


aka. overnight oatmeal.

the first time i had muesli was at the langham hotel in hong kong. their breakfast buffet had almost anything you could think of, but i always wanted the muesli. flash forward to a few days ago when i saw a recipe for overnight oatmeal on the yummy life. i had everything on hand to make it, and a fresh batch of rhubarb strawberry compote. it was meant to be.

the results really took me back to the langham's muesli, my first and favorite. prepared the night before and left in the fridge overnight, the oats and seeds absorb the moisture and get a soft, cooked texture. this is going to be in the breakfast rotation for awhile.

rhubarb strawberry muesli

  • 1/4 cup oats (old fashioned, or quick cooking)
  • 1/3 cup milk (i used almond milk)
  • 1/4 cup greek yogurt
  • 1 1/2 Tablespoons chia seeds
  • sweetener of choice to taste (i used a drizzle of honey)
  • 2-3 Tablespoons rhubarb strawberry compote
  • 4 or 5 strawberries, washed and quartered

preparation:

  • in a jar, add the oats, milk, yogurt, chia seeds, and honey. tighten the lid and shake it up until well combined. stir in the compote.
  • place in the fridge overnight. in the morning, unscrew the lid and add the fresh strawberries. dive in!
