sweet crepes: fresh fig and saturn peach

save room for the savory crepe chaser.
it takes very little effort to make a tasty sweet crepe. the classics are always welcome to my meal (nutella/banana, lemon/honey), but in the middle of summer, you can't beat fresh fruit. my all time favorites are figs and saturn peaches. by themselves, with each other, for every meal. they're all i want to eat.
while this is a great savory crepe chaser, it's also good on it's own for breakfast. i had buckwheat crepes on hand, but plain white flour would probably be more conventional.
fresh fig and saturn peach crepes:
- 2 crepes
- 1 6oz container of greek yogurt (or ricotta cheese, or mascarpone, or whipped cream- they're all good)
- a few drizzles of honey
- 4 fresh figs, sliced
- 2 saturn peaches, sliced
preparation:
- spread 1/2 of the yogurt on each crepe. drizzle with honey.
- plunk down the fruit, dividing it between the crepes and saving a few slices of each.
- fold up the sides of the crepe and top with reserved fruit to hold the flap down. drizzle with a tiny drop more of honey.
makes 2 crepes.
