caramel manhattan special popsicles

another installment of "i'm addicted to float popsicles"...
no exploration of float popsicles, would be complete without manhattan special. this espresso soda is made in our neighborhood, and many an ice cream float has been made with it. my favorite is made with caramel ice cream, although i had trouble finding it. the closest i could get was talenti's salted caramel, which wasn't terribly salty, but was studded with caramel chunks. great for ice cream, but not ideal for popsicles- a smooth ice cream would be better. the chunks sunk to the tip, and the soda and ice cream didn't combine as well as hoped- but they still ended up pretty tasty.
caramel manhattan special popsicles
- 14oz manhattan special, or other coffee/espresso soda
- 1/2 pint of caramel ice cream
preparation:
- if using a popsicle mold with wooden sticks, soak the sticks in hot water for 30 minutes before you use them. this helps keep them from bobbing up when the popsicles are freezing. pour the soda into a spouted pitcher to help when filling the molds.
- fill each cavity with a splash of soda, and a spoonful of ice cream. alternate soda and ice cream until you reach the top of the mold.
- scrape off any excess foam from the cavities. add the lid and sticks. freeze overnight.
makes 10 popsicles
