polka dot popsicles


it's not to late for a popsicle!

it's been a great season for popsicles. float popsicles, fruit popsicles, all kinds of delicious popsicles have found their way into my freezer. and i'm not ready to say goodbye just yet. after making a batch of sangria, i had some lychee juice taking up real estate in the fridge. when combined with a forecast of 90 degrees, the solution was obvious.

  • 1/2 box lychee juice
  • approx 1 cup frozen blueberries

preparation:

  • fill a popsicle mold 3/4 with juice. add about 8 frozen blueberries to each cavity. cover with lid, but don't add sticks. freeze for 20-30minutes.
  • when the juice is slushy, remove the lid and give each cavity a gentle mix so the berries scatter. replace the lid and add sticks. freeze until solid, at least 4 hours, or overnight.

makes 10 popsicles
